Les flavono\u00efdes, les flavonols, les acides ph\u00e9noliques et les Depsides, etc. C'est l'un des composants importants qui font la qualit\u00e9 du th\u00e9, et c'est le composant le plus important, le plus essentiel et le plus b\u00e9n\u00e9fique pour le corps humain extrait du th\u00e9. Son principal composant est constitu\u00e9 de d\u00e9riv\u00e9s de flavan-3-ol, commun\u00e9ment appel\u00e9s cat\u00e9chines. \u00c0 l'exception des ph\u00e9nols et des ph\u00e9nols condens\u00e9s, leurs structures ont toutes un squelette carbon\u00e9 de base C6-C3-C6 avec l'a-ph\u00e9nylbenzodihydropyrane (flavan) comme corps principal.Selon la structure chimique, on peut les diviser en quatre cat\u00e9gories : gallate d'\u00e9pigallocat\u00e9chine (EGCG), \u00e9pigallocat\u00e9chine (EGC), gallate d'\u00e9picat\u00e9chine (ECG) et \u00e9picat\u00e9chine (EC), plus stables \u00e0 pH 4-8, acides, alcalins, lumi\u00e8re, chaleur, m\u00e9taux de transition sujets \u00e0 la d\u00e9t\u00e9rioration des polyph\u00e9nols.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div du VC, et sans les effets secondaires potentiels comme les compos\u00e9s.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b952ed6 class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Les antioxydants du th\u00e9 sont principalement le gallate d'\u00e9pigallocat\u00e9chine (EGCG), l'\u00e9pigallocat\u00e9chine (EGC), le gallate d'\u00e9picat\u00e9chine (ECG) et l'\u00e9picat\u00e9chine (EC), la caf\u00e9ine, les carot\u00e9no\u00efdes, la vitamine E, la vitamine C, l'acide gallique et l'acide chlorog\u00e9nique.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-e500fd4 elementor-widget elementor-widget-text-editor\" data-id=\"e500fd4\" La teneur maximale en cat\u00e9chines dans le th\u00e9 est l'EGCG, suivie de l'ECG et de l'EGC.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-e28cf1d elementor-widget elementor-widget-text-editor\" data-id=\"e28cf1d\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Selon les recherches, les quatre types de cat\u00e9chines ayant une forte capacit\u00e9 antioxydante sont dans l'ordre EGCG&gt;EGC&gt;ECG&gt;EC selon la concentration \u00e9quimolaire, et EGC&gt;EGCG&gt;EC&gt;ECG selon la concentration \u00e9quimolaire. Les deux composants ayant la plus forte capacit\u00e9 d'oxydation sont l'EGCG et l'EGC.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-df71851 elementor-widget elementor-widget-text-editor\" data-id=\"df71851\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>La s\u00e9quence de la capacit\u00e9 \u00e0 \u00e9liminer les radicaux libres de l'oxyg\u00e8ne : EGCG&gt;ECG&gt;EC&gt;EGC. La CI50 de l'EGCG, de l'ECG, de l'EGC et de l'EC pour \u00e9liminer les radicaux libres lipidiques est de : 0,37, 0,46, 0,27 et 0,30 mmol\/L.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-90077de elementor-widget elementor-widget-text-editor\" data-id=\"90077de\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Selon la d\u00e9termination, dans les feuilles de th\u00e9 fra\u00eeches, le rapport approximatif de ces quatre cat\u00e9chines est EGCG : ECG : EGC : EC=5:2:2:1. Bien que la proportion d'EGCG pr\u00e9sente un avantage absolu, son effet synergique n'est pas aussi bon que celui de la combinaison naturelle. Ce r\u00e9sultat sugg\u00e8re que lorsque la cat\u00e9chine est utilis\u00e9e comme antioxydant, le maintien du ratio original de cat\u00e9chines a le meilleur effet
